There you go, the new year is here so it is time for a fresh start and a joyful, full of kindness attitude which can only lead you to do great things. One of the most important aspects of life is of course, health, cause only when you are healthy you can truly connect with other people, enjoy the beauties of the world and live your life to its fullest. Of course, living life to its fullest includes also other skills which we usually develop through perseverance in a consistent practice of understanding of oneself but the first step and the very essential one is always being and staying healthy. We do this simply by being at peace with ourselves and others, by making the best food choices for our own taste and in accordance to our body`s needs. So what is the best choice for a delicious and creamy dessert in the middle of those winter times? The answer is definitely a pink raw cake with cute flowers on it, so easy and fun to make, sweet and always a great choice.

So, as we can see there are there layers here: the crust, the cream filling and the glaze. Let`s take them one by one and see what makes them so amazingly delicious.

First we have the crust. For the crust we need:

dates 100g

nuts 50g

coconut flakes 50g

carob powder 1-2 spoons

coconut oil 1-2 spoon

we mix them well until they make a thick consistency and then we spread this on a cake pan forming a thin layer.

Second we have the cream filling which is made of the following ingredients:

strawberries or raspberries which give the cake it`s pink color and are known for the precious antioxidants and many other nutritious elements they have, about 200-250 g

cashews 100 g or more if you want it to be more creamy

coconut oil 50g

agave syrup according to your own sweetness preferences

vanilla essence

maca  root powder which is a great emulsifier, use only about 5-10g of this.

We put all the ingredients for the cream filling in the blender, add some water and mix them until we get a creamy, dreamy consistency which we then poor on top of the crust.

Finally, the glaze is made of:

cashews 100g

agave syrup

lemon juice.

After we decorate the cake with some flowers or other shapes of choice, we put it in the freezer for about 2-3 h and then we can enjoy it with our lovely friends and family members.
