Beet Spread

A lovely idea for a fresh and colorful veggie spread is this beet spread which looks absolutely beautiful and tastes amazing. Veggie spreads are pretty easy to make, all we need are some nuts and some veggies of choice and we are almost done. The nuts and seeds that we use in our recipes need to be soaked up for few hours first or even overnight in order to wake up their living enzymes and make them more easily digestible, but in case you don’t have time to soak them you can still use them as they are.

This beet pate is made by blending the following ingredients:

1 cup soaked sunflower seeds

1/4 chopped beet

2-3 tbs lemon juice

A pinch of garlic

2-3 tbs nutritional yeast flakes

1/2 cup water.

When we are done blending we simply pour it into a nice looking jar and sprinkle it with some oregano, basil and some more sunflower seeds.

It can be enjoyed with a delicious spring salad, some raw crackers or raw bread of choice. It is delicious, nutritious and a healthy food choice that goes pretty well both as a snack or a lovely dressing.
