Ginger and Lemon Cake

A delicious raw vegan recipe to enjoy with friends and family members is a ginger and lemon cake. It is absolutely amazing and refreshing and a great choice for hot summer days. It combines spicy and sour, crunchy and creamy and it tastes delicious. Starting to incorporate more fresh food in our lifestyles it so easy to do now that it is summer season and we can find all kind of fruits and veggies from local farmers at really good prices.

The ginger and lemon cake has two layers: the crust and the cream filling and some delicious decorations on top.

For the crust we need the following ingredients:

150 g raisins

150 g coconut flakes

2-3 tsp coconut oil

1 tsp lemon peel.

We use a food processor to mix those ingredients until we have a thick and sticky consistency which we can now spread on a cake form.

Next is the cream filling layer. For the delicious ginger and lemon cream we need the following ingredients:

150 g raisins

1/2 cup water

3-4 Tbs coconut oil

juice of 1 lemon

3-4 tsp of ginger juice

1 tsp lemon peel.

We use a blender to blend the ingredients until we have a creamy and smooth consistency. We spread the cream filling on top of the crust and decorate with some coconut flakes, lemon peel, coconut sugar.

Now we just have to leave it in the freezer for a few hours and then it is ready to be enjoyed with our lovely friends and family members.
