Quinoa Salad

Quinoa is a delicious, gluten free food choice that you can choose to make lovely recipes for your healthy meals and it definitely has a wonderful taste and an amazing texture. It can usually be soaked and sprouted or it can be cooked in order to be used in delicious tasting recipes. Quinoa has a high fiber content which is great for the digestive system, it is gluten free, it is high in protein which is great for both vegetarians and vegans and everybody else, it is good for blood sugar control, very high in antioxidants etc.

A wonderful choice to enjoy quinoa is on top of some beautiful fresh romaine leaves, sprinkled with a delicious tahini dressing and topped with red bell pepper and crunchy flax seeds.

For making this recipe we need:

3 romaine leaves

1 cup of sprouted or cooked quinoa

1 cucumber

1/2 red bell pepper

2-3 Tbs nutritional yeast

2-3 Tbs ground flax seeds.

For the tahini dressing we need:

2 Tbs tahini

1 tomato

3-4 dried tomatoes

5-6 olives

juice of 1/2 lemon

1/2 cup water.

We use a blender to mix the ingredients for the tahini dressing until we have a smooth, creamy consistency.

We put the quinoa on top of the romaine leaves, we add the dressing and then we sprinkle those beauties with flax seeds,  nutritional yeast and add the slices of cucumber and red bell pepper. We sprinkle them with some more flax seeds and those delicious goodies are ready to eat.
