Chocolate Brownies

One of the first raw vegan recipes that I have tried to make was raw vegan brownies. I have always loved brownies but when I tasted the raw version I have suddenly realized that raw foods actually taste so much better then the cooked ones. This is really easy and simple to understand when it comes to desserts of course cause we all love sweet tasting foods, but the good news about making raw desserts is that those goodies are actually really good tasting, fulfilling and also healthy for our bodies.

Over the years I have experimented with lots of different ingredients for making delicious, fluffy, crunchy or creamy brownies and I am also pretty sure that I am still going to discover more recipes over time. This chocolate glaze brownies recipe is really easy and simple to make and it tastes amazing. You will definitely love it!

First we make the crust using the following ingredients:

250 g peanuts (or any nuts like cashew, hazelnuts, almonds, etc.)

250 g dates

100 g coconut flakes

3-4 Tbs coconut oil and cacao butter

100 g carob powder

vanilla

cinnamon.

We use a food processor to mix the ingredients until we have a thick, sticky consistency and then we take half of this mixture and spread it on the bottom of a cake form.

Next step is making the chocolate cream filling. For the chocolate cream filling we use the following ingredients:

50 g peanuts (or cashews for their creamy texture)

100 g dates

50 g carob powder

1 cup water

3-4 Tbs coconut oil and cacao butter.

We use a blender to mix the ingredients until we have a creamy and smooth consistency. we spread half of this cream filling on top of the crust, then we add another layer of brownie mixture and finally we decorate it with some more chocolate cream on top, sprinkle some coconut flakes, carob powder and cinnamon powder. We can also add some chopped peanuts if we wish.

The chocolate brownie is ready to be served. It does not need to stay in the fridge to harden but if you want to have a different texture for the cream filling you can put it in the fridge for a while to allow the coconut and cocoa butter based cream to solidify. When it is ready you can take it out and slice it and enjoy a delicious slice of brownie love with your lovely friends and family members! YUM!
