Goji Brownies

Brownies are definitely one of my favorite raw vegan recipes and I love finding new ingredients to incorporate in my recipes. This time for example I made buckwheat  brownies with some chocolate glaze and coconut as usual but with a delicious touch of goji berries and maca powder for a delicious immunity boost and also some hormonal balance. Maca powder is great for making raw cakes and cookies and is also a wonderful emulsifier and a great choice for hormonal balance as I said before. Goji berries have antioxidant properties and are great for the immune system and also a lovely and colorful decoration for our tasty brownies.

For making these brownies we need the following ingredients:

1 cup soaked buckwheat

1 cup mix of sunflower, pumpkin and hemp seeds

2-3 tbs soaked psyllium husk

1/2 to 1 cup water for to psyllium to soak in

maca powder

carob powder

2-3 tbs coconut oil and cacao butter.

We use a food processor to mix the ingredients until we have a thick and sticky consistency and then we spread it on the bottom of a cake form and go on to the next step.

The next step is making the chocolate glaze. For the chocolate glaze we need the following ingredients:

1/2 cup carob powder

1/2 cup water

agave nectar

maca powder

1-2 bananas

a mix of coconut oil and cacao butter.

We use a blender to mix the ingredients for the chocolate glaze until we have a smooth and creamy consistency and then we spread the chocolate glaze on top of our buckwheat brownies.

Final step is to decorate our brownies with some coconut flakes, hemp seeds, pumpkin seeds and goji berries and then we can put it into the fridge for a few hours or enjoy it right away. This recipe is absolutely delicious and a lovely mix of creamy and crunchy in the same place: a savory chocolate brownie. Yum!
