Raw On the Go

I have been traveling from one place to another during the last few weeks and I can say that I am not necessarily used to living like this but it turned our pretty well actually so I am very happy that I have learned over the years how to deal with different kinds of situations and most importantly how to prepare my meals while traveling. Sometimes when I am leaving town for just 2-3 days I do not take any king of equipment with me and I just mainly prepare salads as the main course and use some fruits, nut butters and dried fruits for dessert. Some other times, if I am going to stay in a different place for more than just a few days I found it pretty amazing to bring a travel blender with me so that I get more diversity and I can just play with different kinds of textures in my foods.

One example of a delicious recipe that I made using a travel blender is this mini cake and even though it looks amazing and maybe it seems hard to make, it was actually pretty easy and the travel blender really did a wonderful job. I think that this is also a great opportunity to prepare some amazing looking foods and share them with the people that you are spending this traveling time with. They will definitely love the raw vegan desserts! And also any other raw vegan goodies.

Now let`s see what ingredients we need for making this delicious cranberry mini cake:

crust

100 g cranberries

1 banana

100 g cashews

2-3 tbs agave nectar

1/2 cup water

To make the crust I used the travel blender to grind the cashews and  the cranberries into smaller pieces and then I put them all together in a bowl with the banana and mixed them until they got stick together. Then I just put the crust on the bottom of a cake form and on to the next layer.

For the cashew and cranberry layer we just simply mix the ingredients in the blender until we get a creamy and smooth consistency for each and then we just spread them on top of the cake crust.

Final step is to decorate the delicious cake with a mix of raspberries, blackberries, blueberries and put it in the freezer for a few hours.

When the cake it ready, we can take it out of the freezer, slice it and enjoy a delicious slice of this amazing looking delight with our lovely friends and family members. Have fun eating healthy on the go and share the raw vegan goodness with your companions!
