Coconut Milk Roll

It is the beginning of a new year, it is time for working on making all our dreams come true and of course a wonderful place to start improving our lives is always right in front of us: the food that we choose to put on our plates. For most people the easiest things to do at first is to choose healthy snacks or desserts as alternatives for the processed foods that they are used to eat. It might take some time to incorporate new habits but the main point is that you should love the foods that you put on your plate. So work on finding those healthy foods that bring you most pleasure and start incorporating them on a day to day basis into your current lifestyle and then everything starts to unfold naturally as you move into a healthier lifestyle.

One great choice for a healthy dessert is to use oat flakes. They are absolutely delicious, full of fiber which means they are going to fulfill all your wishes and needs, go well with pretty much anything and are a wonderful choice for a healthy raw vegan roll.

Raw vegan coconut milk is a delicious drink that you can even make at home in a very simple and easy way. All you have to do is to blend some fresh coconut pulp with some water and you have got yourself creamy and dreamy, delicious and sweet coconut milk. Of course if you want it to be even more sweeter you can add some pitted dates or any other healthy sweetener of choice and if you wish to add even more flavor to your coconut drink try incorporating some essential oils, cinnamon, vanilla or even nutmeg powder. Now, to make our delicious and creamy coconut milk roll we need the following ingredients:

200 g oat flakes

2-3 tbsp coconut oil

2-3 tbsp agave nectar or any other sweetener of choice

lemon peel, vanilla

200 g coconut flakes.

We use a food processor to mix all of these ingredients and we add as much coconut milk as it is needed to get a sticky and thick consistency which will actually be our crust for the raw vegan roll.

For the coconut cream we use the following ingredients:

100 g coconut flakes

100 ml coconut milk

3-4 tbsp agave nectar

3-4 tbsp coconut oil

juice of 1 lemon.

We mix all the ingredients until we have a creamy and fluffy, coconutty cream which we will now spread on top of our crust. We make our roll then and sprinkle it with some cocoa powder, cinnamon powder and coconut flakes on top.

Now we just have to put it in the fridge for a while and then it is ready to be enjoyed with your lovely friends and family members. This is the miracle of the human body.  We are made to feel great in our amazing bodies and even if we have been detouring for a while from our natural way of being we can still return to our path and learn to live in harmony and peace again as we incorporate more and more good, delicious and fresh foods into our lives every single day.
