I love raspberries and I have been loving them since I was little. I just loved to pick them up from my grandmother`s garden but now I just get them from the food market. They are absolutely delicious and looking adorable. I love to use them for smoothies and raw vegan cakes and bars. I think that they taste amazing and they just make raw cakes look delightful. I also love using cashews for my raw vegan cakes, they are totally creamy and delicious and make a great cream filling for those raw vegan delights.

For making this adorable looking raw vegan raspberry cake we are going to use the following ingredients:
Crust
100 g dates
100 g coconut flakes
vanilla
3-4 tbsp coconut oil.
We mix them using a food processor until we get a sticky consistency and then we spread it on the bottom of a cake form of choice.
Cream filling
100 g cashews
3-4 tbsp coconut oil
3-4 tbsp agave nectar
vanilla
1/2 cup (or more if needed) water
juice of 1 lemon.
We use a blender to mix all the ingredients until we get a smooth and creamy consistency and then we take about 3/4 of this cream and spread it on top of the cake crust. The other 1/4 of the cream filling we mix with around 100-200 g fresh or frozen raspberries and add some more water and sweetener if needed. When the raspberry cream is ready, we spread it on top of the cashew layer and sprinkle some more coconut flakes and raspberries on top of our beautiful and delightful raw vegan cake.

All we have to do now is to just leave it in the freezer for a few hours and then we can take it out of the cake form, slice it and enjoy a delicious piece of this amazing beauty with our lovely friends and family members.
