I love coconut flakes, coconut oil, coconut sugar and basically all coconut based products. I truly believe that they are very nourishing to our bodies and they are definitely tasting great. I love to add coconut oil to many raw vegan dessert recipes and sometimes even to my veggie spreads because coconut oil is such a great source of healthy fats and it simply adds delicious taste and texture to pretty much any raw vegan recipe. I have been loving coconuts for sure since I was a little kid, especially when it came to sweets and desserts. By learning to actually make healthy desserts for myself and sometimes even learning to make the difference between the taste and flavor of traditional coconut flakes and the organic ones, I was absolutely amazed by all this goodness that coconuts can bring into our lives. Because I love coconuts so much I would love to share with you today a healthy and delicious raw vegan cake recipe, staring of course: coconut based products. YUM!

This coconut cake recipe is really easy and simple to make and it tastes absolutely amazing so you are going to love it. It has just a few ingredients so that we can keep it simple and tasty at the same time. Here are the ingredients that we need for this recipe:
Crust Cream filling
100 g raisins 200 g cashews
150 g dates 3-4 tbsp agave nectar
100 g coconut flakes 3-4 tbsp coconut oil
2-3 tbsp coconut oil 1 tbsp cacao butter
Topping 1 cup water
100 g coconut flakes 100 g coconut flakes
We use a food processor for the crust and process together all the ingredients until we get a thick and sticky consistency which we can then spread on the bottom of a cake form and move on to our next step.
Our next step is making the delicious, creamy and dreamy coconut filling. We use a blender to mix together all the ingredients with the exception of the coconut flakes. We blend them until we get a smooth and creamy consistency and then we transfer our coconut cream from the blender into a bowl and mix in the coconut flakes. When the coconut cream filling is ready we can spread it on top of our beautiful crust, sprinkle the cake with some more coconut flakes and then it is ready to go to the freezer. We let is sit in the freezer for a while and when it gets nice and firm we can take it out of the freezer, slice it and enjoy a delicious slice of this precious goody with our lovely friends and family members.
