Sweet Amaranth Goodies

Amaranth is a great gluten free choice for a healthy, balanced lifestyle. It makes a great replacement for conventional cereals that contain gluten, which might trigger in some people an immune reaction and might not be such a healthy choice after all, even if the cereals are organic and wholegrains, but with amaranth as well as buckwheat, quinoa, chia, there will be no worries regarding gluten, because those psedo cereals don t really have any gluten in them. This just sounds YUM! The best thing about amaranth, I think, is that is can be used for making absolutelly delicious and nutritious raw vegan goodies, such as cakes and cookies, by just simply mixing it with other healthy and delicious raw vegan goodies.

For today s recipe we are going to use the following ingredients:

1 cup amaranth flakes

1 cup hazelnuts

1 cup mixed dates and figs

1 cup coconut flakes

3-4 tbsp coconut oil

1 tbsp carob powder

1 tbsp maca powder.

We use a food processor to mix all the ingredients together until we get a sticky consistency and then if it is a little bit to dry we can add some more coconut oil or just simply almond milk or even water. When the mix is sticky and ready, we can take it out of the food processor and make our amaranth goodies into our shape of choices. I chose squares for mine and then I just poored some agave nectar on top and sprinkle each one of them with some more amaranth or coconut flakes and yum!
