Carrot Soup

Carrots are a wonderful source of fresh and delicious nutrients, they are such a great choice in winter when it is sometimes hard to find local and fresh produce, but they can also be a delightful choice to be enjoyed all over the year. I love to use carrots both for delicious and smooth raw vegan soups and spreads as well as for crunchy and crisp additions to a veggie soup or colorful salad. Spring is here and it is about time to add more colors into our daily lives. By choosing to feed oursleves fresh and delicious raw foods, we are making a verry important step towards achieving greater healthy and over all well being.

For today`s recipe we are going to use the following ingredients:

3-4 medium carrots

1 cup soaked sunflower seeds

1-2 cloves of garlic

1-2 cups water/ coconut milk

juice of 1 lemon

1/2 red bell pepper

2-3 tbsp nutritional yeast flakes.

We use a blender and mix all the ingredients together until we get a smooth and creamy consistency. We can use more or less water/ coconut milk, depending on how thick we would like the soups consistency to be. When the soup is ready we can take it out of the blender and pour it into a nice looking bowl of choice. Then we can serve it right away, next to some delicious raw vegan crackers or keep it into a tight sealed container in which it would last around 24-48 hours in the fridge. We can also spread some parsley, chopped red bell pepper and hemp seeds on top of it to make it look even better.
