Coconut Plum Cake

I personally like making all kinds of recipes with all kinds of coconut based products. I love using cold pressed coconut oil for my desserts and smoothies and I love using simple coconut oil for all kinds of main courses and dishes that I make. I love to use coconut flakes for desserts or for topping my smoothies and my cereal bowls, I am enjoying the taste and texture that coconut floor can bring to any raw vegan recipe, be it sweet or any other taste, coconut products are just amazing. I buy both conventional and organic when it comes to coconut products, but I have definitely noticed that the organic ones do have a stronger taste of coconut conpared to the conventional ones, although it also depends on the brand, some conventional brands have also a great and strong coconut flavor kept into their products. YUM!

Today`s recipe is a super delicious coconut cake which has only two simple layers: the crust which is the base for the cake and the coconut cream which we are going to use to top our beautiful and delicious coconut goodie. For this recipe we are going to use the following ingredients:

Crust:

1/2 cup plums (dried)

1/2 cup mix of oat and buckwheat flakes

1/4 cup orange juice

1/4 cup coconut oil mixed with agave nectar.

We use a food processor to mix all the ingredients together until we get a thick and sticky consistency. When the crust is ready we can put it into a shape of choice and then we can move on to the next step of making this dellicious recipe: making the coconut cream.

Coconut Cream:

1/4 cup soaked cashews

1/4 cup coconut oil mixed with agave nectar

1/2 cup coconut flakes

1/2 orange juice.

We use a blender to mix all the ingredients together until we get a smooth and creamy consistency. When our coconut cream is ready, we can spread it on top of our crust, add some more coconut flakes on top and our delicious cake is ready to be served, For a firmer texture we can allow it to sit in the fridge for about 1-2 hours and then it will also be easier to cut and eat, but it can also be served right after making it if that`s what we desire.
