Raspberry Caramel Bowl

I love the beauty and magic of eating fresh berries when they are in season and I also love eating berries even when they are not in season since they are a great fruit choice for being frozen and eaten at any time of the year. Berries are perhaps the most friendly fruits when it comes to freezing them in order to be able to eat them at a later time and since freezing at their ripeness peak is also a great idea, then it means that they are still going to be super nutritious and delicious even when we serve then after being frozen, this is just amazing. Along with those delightful benefits, berries are also so cute, pretty and colorful while also being super easy to add to all kinds of delicious and nutritious raw vegan recipes. I love to make all kinds of goodies with berries, things such as: smoothies, raw vegan bars, cakes and cookies. YUM!

Today`s recipe is a wonderful mix of raspberries, raw crumbly cookies and raw caramel cream. This recipe is super delicious and nutritious and it just looks amazing. I have decided to mix a few textures in order to make it even more delightful, crunchy from the raw crumble cookies and some cereal flakes and smooth and creamy from the raspberries and the caramel date dream. Super fun! So, for this recipe we are going to use the following ingrediens:

Crumble cookies:

1/2 cup soaked dates

1/2 cup soaked figs

1 cup coconut flakes

3-4 tbsp coconut oil.

We use a food processor to mix all the ingredients together until we get a sticky and thick consistency. When it is ready, we can take it our of the food processor and mix it with some cereal flakes of choice. I used fome corn flakes for mine. Then we move on to the next step.

Caramel cream:

1/2 cup soaked date

1/2 cup soaked figs

water from the soaked dates and figs (around 1/2 cup – 1 cup)

3-4 tbsp coconut oil

3-4 tbsp carob powder.

We use a blender to mix all the ingredients together until we get a smooth and creamy consistency and then, when our caramel date cream is ready, we can take it our of the blender and pour it on top of the raw crumble and flakes mixture. Finally we add some raspberries to our bowls and mix them into the crumbles and then our delicious raspberry caramel bowls are ready to be served. It should be around 2-3 big bowl servings or 3-4 smaller bowl servings.
