I believe that the best part of going vegan is that we still get to enjoy super delicious and tasty, good looking desserts, while also taking great care of our bodies and of our selves. Raw vegan and vegan desserts are just wonderful. They are packed with lots of nutrients and healthy goodness, they look amazing and they just taste divine. Natures goodies are truly available for us at all times. As most raw vegan desserts rely on nuts, seeds and dried fruits, this means that we can find those on the market at pretty much any time of the year. They are all dried fruits or seeds of the fruit and nut trees and they can really last a long time in our pantries, preserving all that nature goodness in such a small piece of the whole fruit. It is truly amazing and divine! Yum!
Todays recipe is a wonderful mix of those natural goodies, with a twist from the date caramel cream. Here are the ingredients that we are going to need:
Date cream:
1 cup soaked dates and their soaking water
3-4 tbsp coconut oil.
We use a blender to mix those together until we get a creamy and smooth consistency.

Cake base:
1/2 cup soaked dates
1/2 cup raisins
1/2 cup coconut flakes
1/2 cup oat flakes
1/2 cup walnuts
cinnamon
3-4 tbsp coconut oil.
We use a food processor to mix all the ingredients together until we get a sticky and thick consistency, and then when our cake base is ready, we can start layering it right away. We put the cake base first on the bottom of a cake pan or form of choice, then we add the date cream on top of this and finally we sprinkle the whole cake with some more chopped walnuts and even raisins or coconut chips.
