Spring time is here and since its official now and today is also woman`s day, I have decided to share with you a delicious raw vegan dessert recipe, which can also be used as a healthy snack and can even keep you happy and fulfilled up until your next meal, no matter where you might be enjoy it. It is super easy to make, just a few ingredients are needed and can be served right away or it can be easily taken with you on the go. Are you excited to find out what am I talking about here? Then, its great cause todays recipe is a healthy and nutritious layered plum cake. Yum. Its great for your digestion, its fulfilling and delicious and super easy to grab with you everywhere you go. Sounds fun, right?
For this recipe we are going to need the following ingredients:
1 and 1/2 cups dried plums
1 cup oat flakes
1/2 cup sunflower seeds
3-4 tbsp coconut oil.

We use a food processor to mix all the ingredients together until we get a thick and sticky consistency and then, when the cake base is ready, we can take our mixture out of the food processor and spread it on the bottom of a square shape, or any other shape you desire. At this moment we will need to put aside about 1/2 cup of this mixture for topping our cake at the end. Then we can move on to the next step.
Now we are going to make our delicious plum jam, raw vegan of course, and for this we are going to need:
1 and 1/2 cup dried plums
3-4 tbsp coconut oil
1/2 cup water
sweeter such as agave nectar for a sweeter taste (this one is optional).

We use a blender to mix all the ingredients for the jam together and blend until we get a smooth and creamy consistency. When the jam is ready, we can take it out of the blender and pour it on top of our cake base. Finally we can add the rest of the mixture for the cake base on top of the jam for a crunchier and more delightful texture. All that is left now is to just simply enjoy this delicious and nutritious treat and have a great woman`s day.
