Cauliflower Spring Salad

I have discovered recently that I have been really in love with cauliflower so that means that I have tried all kinds of recipes with cauliflower: soups, spreads, salads and so on. I have already shared here a cauliflower soup recipe so today I am going to share another delicious and nutritious cauliflower based recipe, which happens to be just perfect for this spring: cauliflower salad. It is super colorful, filled with abundant nutrients, delicious ingredients and amazing textures. It has lots of benefits, its super filling and it tastes simply divine. Feel free of course to adjust as you wish, add the ingredients that you resonate with and that fit your own taste buds and make yourself a super tasty salad to enjoy for lunch or even as a great choice for dinner. Yum!

For this recipe we are going to use the following ingredients:

1 cup baby spinach leaves

1/2 cup chopped tomatoes

1/2 cup chopped red bell peper

around 100 g smoked tofu

1 cup chopped cauliflower

juice of one lemon

2-3 tbsp nutritional yeast flakes

2-3 tbsp seeds mix (I used sunflower seeds, sesame seeds, flax seeds and pumpkin seeds).

Add all of the ingredients into a large mixing bowl and mix them all together right away. If you want you can also add some cold pressed oil such as olive oil or sunflower oil. Also, a great thing to add would be some fresh leaves of basil, fresh parsley or even some oregano. Dried herbs are fine too, just do what fits your own taste best. Finally, when your salad mix is ready, transfer it into a serving bowl of choice and enjoy it next to some raw vegan crackers or some rice cakes. The cauliflower tastes amazing when it is mixed with lemon juice and nutritional yeast, and the smoked tofu its gone make it taste even better.
