This week`s recipe is a great choice for a healthy and nutritious lunch as well as a nourishing and delightful choice for dinner. It can be served right away. It can be used even as a snack, packed and taken with you super easily and it definitely tastes divine. Avocados are a great source of healthy fats and they are so easy to eat and to be served as a super amazing food for yourself at pretty much any time of the day. Even though I have been using a blender for this recipe, the truth is that, when ripe, avocados can be smashed super easy with a fork and mashed with the other ingredients. So, in the spirit of improvisation, feel free to prepare this recipe whichever way fits your own preferences best and remember to always stay true to your own unique journey. There are so many possibilities out there, that it is simply astonishing how many nature`s goodies are and in what a great abundance of colors and textures they present themselves to us. Yum!

For this recipe we are going to use the following ingredients:
1 ripe avocado
5-7 cherry tomatoes
5-6 dried tomatoes
3-4 tbsp nutritional yeast flakes
1-2 tbsp cold pressed sunflower seeds oil
juice of 1 lemon or 1/2 cup water
oregano, basil.
We use a blender to mix all the ingredients together until we get a thick and sticky consistency and then when our delicious and nutritious veggie spread is ready, we can take it out of the blender and place it into a nice looking bowl of choice. Feel free to add any topics you desire to your serving bowl, for example I decided to add some mixed greens and a few tablespoons of mixed seeds. This spread can be served very well on its own or it can be served on seeds or veggie crackers. Rice cakes are also a great choice as their crispy texture its a great addition to the smoothness of this super creamy avocado spread.
