Chocolate Date Cookies

This week`s post is all about healthy, fulfilling and nutritious treats and desserts. Sometimes we might be falling into that mindset that sweets are guilty pleasures, but the truth is that it does not have to be that way. Of course, not all sweets are healthy or even satiating, but there are definitely lots of both delicious and nutritious options for treats and desserts when it comes to raw vegan food. Many times the problem with conventional sweets is that they are filled with processed ingredients and they are made so that you always crave for more, and for sure, that is not a good sign for a healthy nutrition seeker. Raw vegan desserts are definitely super tasty and filled with natural sugars, complex carbohydrates and good fats. As usual, all we have to do is find what fits best in our own unique lifestyles as individuals, but also chose to savor and enjoy those treats from time to time and not abuse them. Truth be told, I actually found out that it would be quite hard to eat too much of a raw vegan dessert as they are so satiating and filling, so with that in mind lets get these cookies done!

This chocolate date cookies recipe has three layers: the cookie base, the date cream and the chocolate cream. Here are the ingredients for each layer:

Cookie base

1/2 cup grounded flax seed

1/2 cup coconut flour

2-3 tbsp coconut oil

3-4 tbsp agave nectar

1/2 cup water or nut milk.

We use a food processor to mix all the ingredients together until we get a thick and sticky consistency.

Date Cream

1 cup soaked dates

the soaking water from the dates

2-3 tbsp coconut oil

We use a blender to mix all the ingredients together and blend until we get a creamy and smooth consistency.

Chocolate Cream

1/2 cup of the date cream

3-4 tbsp nut butter of choice

3-4 tbsp carob powder.

We blend all the ingredients together until we get a smooth and creamy consistency.

When all the cookie layers are ready, we can now stack them on top of each other, sprinkle some coconut flakes on top and allow them to sit in fridge for about an hour or so, just until they reach a good consistency, or if you are just super excited, they can also be served right away. It is just that the texture will be a little bit soft and gooey but they still taste amazingly delicious and absolutely divine.

I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
