One of my favorite recipes to enjoy for lunch is of course making a big, colorful, super delicious and nutritious salad. This way I can integrate easily into my daily meals all kinds of veggies and greens, it is super quick and simple to make and it just tastes divine. Over the years I have tried all kinds of salads and combinations of veggies and greens and most of the times I would just add to them something like a mix of seeds or a nut or seed spread or a delicious and nutritious raw vegan dressing. Still, the basic salad mix remains pretty much the same in terms of the recipe, I might be using different types of greens or veggies from one day to another, in order to have variety both in terms of tastes, texture as well as nutritional value and benefits, but it is based on the same principles. This is why I have decided that today I want to share with you my ideas for a basic salad mix recipe and then of course, as always, feel free to improvise and create your own mix that best fits your own wishes, desires, taste buds and nutritional needs.

For the basic salad mix recipe, we need the following ingredients:
2 cups of greens (baby spinach, valerian, rucolla, cicory or any other leafy greens)
1 cup chopped veggies (tomatoes, bell peppers, cucumbers, carrots or any other veggies)
3-4 tbsp cold pressed olive oil
3-4 tbsp apple cider vinegar or the juice of 1 lemon
a pinch of pink Himalayan salt.

We add all the ingredients to a salad bowl of choice and mix them well until the olive oil and the vinegar or lemon juice are evenly spread. Then, when the basic salad mix is ready we can add to it some more spices, seeds, nuts or spreads or it can be served right next to any other dish of choice. The salad can be served right away, or if you prefer to serve it later, just mix the greens and veggies and add the oil, vinegar or lemon juice and salt right before serving. The veggies and greens mix should still stay fresh up to two days in the fridge, especially if you keep them in a sealed container.
