Summer is here and it is great to enjoy the sunshine, get out in nature and take some time to just relax and savor the moment. It is also a great time for celebrating abundance and joy and all the goodness that is now unfolding through a large variety of seasonal produce and lots of goodies to be indulging on. Fruit is nature`s candy and for sure we all need balance in our lives, meaning living a healthy balanced lifestyle through healthy nutrition, healthy movement and of course a healthy spiritual practice. But, when we are thinking of something or craving something sweet why not make it a healthy and nutritious choice at the same time, a choice that is actually nourishing our bodies and not depleting them of valuable nutrients. Its all about awareness and grace. Its all about love, fulfillment and nourishment, therefore today`s recipe is a great choice for a healthy dessert, but also for an energizing and super filling and nutritious breakfast. Just try it and you will simply love it.
For this recipe we are going to use the following ingredients:
1 cup coconut or almond milk
2 cups of apricot slices
2-3 tbsp chia seeds
1 tbsp rice protein powder
1 tbsp maca powder
coconut flakes, mix of goji berries and cranberries to top our delicious pudding.

We use a blender to mix the coconut or almond milk with the apricots, maca and rice protein powder. We blend them together until we get a thick and creamy consistency, and then when the mixture reaches our desired consistency, we can take it out of the blender and transfer it into our serving bowls of choice. It should be just enough for about two servings. Now we can add the chia seeds and stir them well into the mix until they start to thicken and it all turns into a pudding like consistency. When the pudding is ready we can top it with some coconut flakes, and for mine I also chose a mix of goji berries and cranberries. Feel free to add any other toppings of your own desire, such as cinnamon or vanilla, just to give it an even richer taste. Yum!
