Blackberry Blissful Breakfast

I have to admit, I have been enjoying lots of chia puddings, and also lots of berries lately, especially blueberries and blackberries therefore I am going to share with you in a few posts some of my new creations, amazing healthy, delicious and nutritious recipes including those goodies and not only, but also all kinds of wonderful raw vegan goodies. This week is all about chia seeds and blackberries. I just love blackberries and since they are in season now, I am so happy and cheerful to be able to find fresh blueberries all over the place. They are also super affordable right now since its their season and also have a high nutritional input as they are being consumed in their raw and pure form. I love both the texture and the flavor of fresh blackberries and even though I would in general use lots of berries for smoothies, when I buy them frozen, for this season, I have done my best to come up with all kinds of creative and beautiful ways to be able to enjoy them in their whole and fresh form. I am currently enjoying blackberries just simply by their own or in amazing chia pudding recipes.

Therefore, this week`s recipe is a blackberry blissful breakfast recipe, its basically a chia pudding, which is a great recipe to start our days with, as it is super nutritious and fulfilling at the same time, with just a few twists that make it even more delicious and bountiful. Yum!

Here are the ingredients that we are going to need for this amazing, nutritious and delicious blackberry blissful breakfast recipe:

3/4 cup cashew coconut milk

(just mix in a blender 1 cup of cashews, 2 tbsp coconut butter, a few soaked dates, 2 cups water for a rich consistency milk, for a thinner consistency you can simply add more water)

2-3 tbsp chia seeds

1 veggie coconut yogurt

1/4 cup fresh ripe blackberries.

We mix in a bowl or jar of choice the cashew coconut milk with the chia seeds and we allow it to sit for around 5-10 minutes in order to get that creamy and fluffy consistency of a pudding. Then we can add the coconut yogurt and the fresh blackberries on top of the chia pudding and our super delicious and nutritious blissful breakfast pudding is ready to be served. Feel free to also add some topping if you wish, such as coconut flakes, cinnamon powder or any other delicious goodies that you night desire.

Making healthy and fulfilling choices on a day to day basis is a habit just like any other habit and it requires repetition in order to became second nature, but as soon as our bodies and our minds get used to the new habit, then everything unfolds naturally, in a healthy, balanced way. I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest.
