Tofu Kale Salad

I have really been enjoying super simple salads lately. I just love them. They are so fun, so nutritious and most importantly so easy to make! I had such a hard time trying over the years to put into my salads as many ingredients as possible to just get the most nutrients, but then I realized that, even though those kind of complex salad are sometimes a good idea, the nutrient thing should not be a problem. This can simply be addressed by rotating ingredients or recipes, or just salad mixes. Oh, this felt so good for me and I have to say that I am enjoying so much right now those super simple salads. Something like having three to five ingredients makes me able to appreciate the meal so much more, to actually feel the texture and flavor of each ingredient and just embrace it. Sometimes, yes less is more, more consciousness, more ease, more appreciation in my case. Therefore I am going to share with you today one of my new favorite recipe of the super simple salad mixes. Yum!

Here are the ingredients that we are going to need for this recipe:

2 cups of chopped kale leaves

1 block of tofu (I love the oregano and basil flavored ones)

2-3 medium chopped cucumbers

2-3 tbsp olive oil

2-3 tbsp mix of nutritional yeast and flax seeds.

We mix all the ingredients together into a nice looking bowl of choice and the salad is ready to be served. It can also be kept in the fridge for up to two days, just remember to add the oil right before serving so that the veggies can keep their amazing freshness.

Making healthy and fulfilling choices on a day to day basis is a habit just like any other habit and it requires repetition in order to became second nature, but as soon as our bodies and our minds get used to the new habit, then everything unfolds naturally, in a healthy, balanced way. I truly believe that when we take care of our bodies and nourish ourselves with the most nutritious and fulfilling plant based foods available to us at all times, then we are really able to reach our full potential and live life to its fullest. Life is made to be lived with a sense of purpose and meaning, and by practicing conscious eating we are bringing meaning and purpose into our life, therefore redefining our sense of health and well being in general and living a happy, healthy and fulfilling life as a result.
